recipe/Sweet Potato Bisque
- 2 tsp olive oil
- 1/2 cup finely chopped onion
- 1/3 cup chopped celery (finely)
- 1 1/4 lb sweet potatoes (peeled sweet potatoes finely chopped about 4 cups)
- 1 oz vegetable broth
- 2 cup water
- 1 tsp sage (dried rubbed)
- 1/4 tsp salt
- 1/4 tsp pepper
Heat oil in a large saucepan over medium heat. Add onion and celery; sauté 4 minutes or until onion is tender. Add potato and next 5 ingredients. Bring to a boil. Cover, reduce heat, and simmer 30 minutes or until potato is tender. Uncover and cool 10 minutes.
Use immersion blender or place half of potato mixture in a food processor or blender; process until smooth. Pour pureed mixture into a large bowl; repeat procedure with remaining potato mixture.
Return pureed mixture to saucepan; cook until thoroughly heated.
